Although it is unusual for me to post twice in one day (in fact unheard of I think) I just had to respond to the concerns of a dear and loyal reader. This lovely friend was deeply concerned (nay distressed) at the lack of baked goods in recent posts. Has Emmalina abandoned The Way of the Cake? She wondered to herself one lonely evening. Fear not my little Spanish friend, cakes there are and cakes there will be.
So to allay the fears of the lovely Veronica (and perhaps others) here, for your delectation, is the Sunday Chocolate Fudge Cake.
Two moist layers of light chocolatey sponge cake,
Each topped with a generous helping of warmed, home-made Damson jam,
then covered with a thick topping of double cream whipped chocolate ganache,
finished with a halo of grated white chocolate.
Hopefully that will see you through until our next cakey get together…what’s that you say? You’re on your way over? The oven is on my friend, the oven is on.
