Strawberry season has officially landed! It will be gone so quickly that I am determined to make the most of it. The first batch (well double batch actually) of strawberry jam was made today. These fresh and locally picked beauties are now glistening in their jars on my counter just waiting for a fresh loaf or some flaky scones. And with that kind of inspiration I can’t see the baking being far behind! The recipe I used is a doubled version of the Strawberry Jam recipe from the River Cottage Preserves Book. A book I refer to almost constantly throughout this season of plenty and preserving.
That is, when I can get to the fruit before a certain other person does…
